Senior graduation project help on diabetes topic?

For my senior exit(graduation) project, I am trying to build something for my product and my senior essay paper is called "How Diabetes affects the body" and i was thinking of building a Pancreas because of how it makes insulin for the body. But i was really thinking of creating more than one. For example I would make 2. One to show how the pancreas works in a non-diabetic person and their bodily functions, and second one for a diabetic person's pancreas to show how their body works. But is there really a difference in the bodily functions of the two? But that's my idea and the people in charge of the judging don't want us to spend a lot of money either. Does anyone else have other ideas what i can make though? and how does mine sound?
